Fruits: apples (wild), quinces, cut with knife into small pieces
hops: tradition, Hersbrucker,
Native yeasts: Viognier grape blossoms, Pinot gris grape blossoms , Baco
Aging: stainless steel tank, 8 months of fermentation and maceration with the fruit + 4 month of fermentation in bottle (2nd
fermentation).

On the palate: fruity, ethereal and juicy. The end is
mineral and juicy.
