Amber-hued and textural, L’étable Fumé opens with notes of dried apricot, hay, and verbena, layered with gentle smoke, oak, and orchard fruit. Structured and lightly tannic, it delivers the grip and warmth of an orange wine — without the alcohol.
Ingredients: Viognier, Sauvignon (Ardeche, FR) and Bacchus (Kitzingen, DE) grape juices, water infusion (water, oak, grape skins, alfalfa, chamomile, lemon verbena, rhubarb root), water, apple cider vinegar, lacto-fermented grapes, celeriac and peach, kombucha, alcohol tincture (water, alcohol, sea buckthorn, dried apricot, ceps, meadowsweet), acidulant: succinic acid.
Etable Fumé, a smoky haystack. We found the pleasant stableness in this bottle in the food forests of De Nieuwe Bodem and Schevichoven. What is normally achieved by over-ripening apples on straw, we found equally well in alfalfa, chamomile, and verbena. A haystack of Dutch herbs. In an orange wine, the skin action provides the bitterness. Rhubarb root takes over this task and provides a lovely bittering agent that is slightly medicinal, but also supports oxidative properties. Lacto-fermented peach and celeriac provide stone fruit & earthy notes. Another nod to the skin maceration so characteristic of orange wine.
