100% Chardonnay from clay/limestone soils in the Auvergne. Grapes are hand-harvested and ferment following two different processes: 1/3 of the grapes are carbonically macerated meanwhile 2/3 are directly pressed. Vessels for spontaneous fermentation and aging are evenly split between stainless steel, barrel, and amphora. Bottled unfined, unfiltered, no additional SO2. 13%ABV
