
Etnella 'Kaos' Rosso 2015
Tasting Notes: Vino Rosso Kaos is experimental winemaker Davide Bentivegna’s more traditional take on an Etna Rosso. After a fifteen-day spontaneous fermentation, this blend of Nerello Mascalese and Nerello Cappucio spends 11 months in barrel before bottling. On the nose, it blossoms with purple flowers and volcanic soil. The palate is expansive, filling the mouth with brambly berries and wild plums.
Estate History: Founded in 2008 by visionary Davide Bentivegna, Etnella produces wines that are deeply terroir driven. He works just 9 hectares of vines, scattered across Etna’s eastern slopes. All his wines are spontaneously fermented—using the local yeast present on the grape skins to kickstart fermentation, rather than mass-produced winemaker’s yeast.
