Fruit is sourced from Gabriëlskloof and from a special block in Elgin, located at 300 meters above sea level

Whole bunch pressed and fermented in locally made clay amphorae, and then aged for 10 months

The amphorae range in sizes between 500L-860L and are porous with no lining inside, allowing for the perfect amount of micro-oxidation during maturation
