The name ICARE was conceived and created by Céline and Isabelle MEYER in 2018. The legend of Icarus flying as close to the sun as possible to achieve his dream of the absolute, testifies to the creativity and imagination at the service of wine. A unique Pinot Gris that transcends preconceptions about this grape variety.
Winemaking and aging:
The harvest is 100% manual.
A light 24-hour maceration precedes pressing. The grapes are then pressed whole for approximately 6 hours in our pneumatic presses. Settling is natural. Fermentation begins spontaneously with the natural yeasts in our century-old oak casks. This is followed by aging on fine or total lees, depending on the vintage, for several months, until bottling, which usually takes place as summer approaches. Before bottling, the wine is filtered. Sulfur levels may be adjusted at this time, if necessary.
Comments:
Completely dry, ICARE is straightforward without austerity. The earthy, fleshy nose opens onto ethereal, focused fruit. The energetic, long, and precise palate reveals a profound salinity. A Pinot Gris with an earthy foundation that reaches for the sky.
Food and wine pairings :
This wine pairs wonderfully with certain seafood dishes such as roasted calamari or razor clams cooked on a griddle with a garlic and tomato sauce. Its earthy structure complements many spicy dishes, with or without meat.

The winemaker: Domaine Josmeyer has been making wine in Alsace over five generations dating back to 1854. Today, sisters Céline and Isabelle Meyer run the Domaine and have been practicing biodynamics since 2000. The hand-picked grapes are crushed slowly and left to rest in century-old wooden casks where the wines ferment naturally at their own rhythm. The wines are kept on their lees for several months during winter until they’re ready to be bottled and served on your table!
