La Collina 'Quaresimo' Lambrusco

The Cooperative, La Collina, resides in Reggio Emilia, the heart of the Emilia Romagna. This region is home to Lambrusco, the tri colored Italian flag, and Parmigiano Reggiano! The story is unexpected; back in 1975, twelve young men joined minds and hearts to begin a cooperative of both agricultural ambitions and humanitarian efforts. The project was aimed to draw in those with drug problems, rehabilitate them through the rewards of biodynamic farming, and reap the benefits of incredible wine, cheese, and other produce. The winery is, in essence, a result of community collaboration far ahead of its time in the hills of Emilia Romagna.
This is a traditional pure expression of Lambrusco without the cloying sweetness. Enea uses frozen grape must to help kickstart the fermentation naturally, and boost the aromatics of the resulting wine. While this Lambrusco is definitely tart and fruity, the acidity and bubbles will stand up to charcuterie and pizza effortlessly.
