Les Lunes Cabernet Sauvignon North Coast Claret 2022
Farming: This wine is made from a selection of Les Lunes' farmed vineyards throughout the Napa and Sonoma County as well as some of their favorite cooler climate sites. Les Lunes farms Ivanoff, Stone Barn and Locke Vineyards. Farming across all of the vineyards in this cuvee is strictly organic and regenerative, with a focus on soil health, good pruning, and minimal inputs to allow the sites to truly express themselves to their full potential.
- Ivanoff Vineyard: The Lovall Valley is one of Napa Valley’s coolest regions and the gravelly loam soils provide a distinct and bright fruit expression.
- Stone Barn & Locke Vineyards: Located in Sonoma on the Huichica soil series, the Cabernet grown on these deep, loamy soils paired with the cool climate, lend to beautiful blue fruit and freshness.
- Lolonis Vineyard: 100-year-old Cabernet Sauvignon in Redwood Valley grown on redvine sandy loam soils gives an aspect of depth and structure to the wine.
- Hannah Nicole Vineyard: Cabernet Franc grown in the maritime influenced San Francisco Bay AVA gives lightness and balance to the midpalate.
Winemaking Notes: The grapes from each vineyard were harvested and fermented separately at optimal ripeness and fermented at cool temperatures with 100% destemming. The lots were pressed at dryness (typically 10-14 days) and aged for 10 months in barrel and tank at which point the wine was racked off the fine lees and blended before bottling without fining nor filtering.
"This is a classic California Cabernet. There is a firm tannic structure that is balanced by luscious blue/dark fruit on the palate and plenty of dried herbs, olives, and cassis on the nose. Delightful with its primary fruit, the wine does exceptionally well with grilled/roasted meats and veggies."
Sam Baron and Shaunt Oungoulian are two young California wine makers dedicated to remaining California wine makers. Sam Grew up in a winemaking family working in vineyards from a young age. After his studies at UC Davis, Sam staged in Burgundy, spent some time in San Francisco retail, and assisted Chris Brockway. Shaunt trained in chemistry at UC Berkeley but then studied oenology at Davis where he developed a love for natural wine. This led him to stage with Philippe Valette, and in turn led us to Les Lunes with endorsement from Valette. The two are now tending vines in Paso Robles of San Luis Obispo, and driving the grapes to their wine cellar in Orinda in the East Bay to make these juicy wines. Sam and Shaunt are also part of the team of Populis Wines, along with Martha Stoumen and Diego Roig.
