This is the third release from our solera of Chardonnay, Pinot Noir and Pinot Gris. It’s from a small parcel that was once part of the same historic farm as Hiyu. The piece of land is gently rolling and surrounded by Orchard on three sides with views of
Mt. Hood. The current release includes wines from 2015 through 2021.
It’s a wine that is many wines at once. In one sense it’s a wild, unfiltered orange wine, with all the textural and umami laden elements that accompany this. But it is also like a white burgundy. The notes of honey and lavender remind one of the
Chablis and the rich texture and reductive characteristics of a very luxurious and long-lived Meursault or Corton Charlemagne. Finally, the long aging in barrel on the lees of many different vintages creates similarities between Sherry and
vintage Champagne. It has the salty, nutty, oxidative depth of the formal and the celestial bread and custard like essences of the later. Each vintage builds on the last. The addition of young wine allows the wine to become deeper and darker while
retaining just enough freshness to stretch out oxidatively into time.
