Scar of the Sea Sparkling Rosé of Pinot Noir 'Topotero' Methode Ancestral
Country: USA
Region: Central Coast
Type: Sparkling Wine
Grape: Pinot Noir
This wine is a Rose of Pinot Noir made in the Methode Ancestrale tradition from the Topotero Vineyard, located in Avila Beach in San Luis Obispo County. The vineyard is farmed practicing organic on a home ranch just over a mile from the Pacific Ocean. The wine was whole cluster pressed and then fermented in neutral french oak barrels with native yeast. The wine was bottled at the very end of fermentation to capture the natural bubbles in the bottle. It aged on lees in bottle before being riddled, disgorged, corked and caged, all by hand. No added sulfur.
A lightly colored, off-dry sparkling wine with a soft mousse and flavors of fresh berries, ripe citrus and herbs.
