A super interesting still fruit wine of 50% Grüner Veltliner and 50% Mirabelle Plums.
Grapes and Plums were foot stomped in bins, macerated and then pressed.
Barrel fermented separately with native yeast and blended together after barrel aging for 9 months.
Tasting Notes: eucalyptus, all spice and pepper; odd and delicious! A must try!

Dan Rinke and his wife, artist Kim Hamblin, are making wine and cider on their farm with the leading philosophy being one of respect. Respect starts with organic and biodynamic farming principles, eliminating synthetic fertilizers, herbicides, and
fungicides, and using only their own cow manure and biodynamic preparations made from plants growing on the property. The same philosophies that are used in the vineyards are also applied in the winery: “Let the wine make itself. The wine does
not need commercially bought additives. In doing so, you are not honoring how the grapes are grown, their vintage variation, or sense of place," says Dan. Of the 132 allowable additives, only a small amount of sulfur is used in winemaking
process, and only right before bottling. Both the Syrah and Pinot see a good portion of whole-clusters, are punched down by foot, and age in barrels of various ages before being bottled by hand, without fining or filtration.
