Soil: Sandy loam soil, relatively shallow, with volcanic origin (porphyry) and quartzite schist
Viticulture: Biodynamic, by hand, without tractor

Vintage: 2021 was a wonderful growing season with a very early and sunny spring. Flowering at the end of May, high temperatures in July, a humid August and an autumn marked by good weather
Vinification: Spontaneous fermentation in stainless steel, short maceration, 50% of must fermented with skins from Caroline
Maturation In oak barrels and stainless steel until March 2022, without fining or filtration
